Zooki vegan golden milk pancakes

Whenever there's a chance of getting sick, I like to keep my immune system boosted, and if I can make it yummy at the same time, why not! There are many fun and interesting ways to achieve this, and one that surely satisfies are these golden milk pancakes. They are inspired by one of my favourite superfood beverages.

When you think of a recipe that’s full of omega 3vitamin C and anti-inflammatory properties, you don’t usually think of pancakes. But one of the best things about them is that they are an incredible canvas for flavour and nutrient experimentation and go very well with more than just maple syrup. 

Ingredients

Vegan friendly, gluten free, dairy free

  • 1 cup wholemeal flour
  • 1 tbsp baking powder
  • 1/2 tsp chai spice⁣
  • 1 tsp turmeric ⁣powder
  • 1 cup oat milk
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1 tbsp flaxseed meal
  • 3 tbsp watero
  • Pinch of orange zest⁣
  • 1 sachet of Vitamin C Zooki, Citrus Orange

Method

  1. Whisk together 1 cup of wholemeal flour, 1 tbsp of baking powder, 1/2 tsp of chai spice, 1 tsp of turmeric powder and a pinch of orange zest.
  2. In a separate bowl, mix 1 tbsp of flaxseed meal with 3 tbsp of water. Leave to set for 5 minutes and then add 1 cup of oat milk, 1 tbsp of maple syrup and 1 tbsp of coconut oil and whisk together quickly, otherwise the coconut oil will set.
  3. Add the wet ingredients to the dry ingredients and mix together. Preheat a pan on low/medium heat for a couple of minutes (it keeps the pancakes fluffy). Grease the pan with a little bit of coconut oil and add 1/4 cup of batter into the centre, flip gently to keep the thickness.
  4. Add your toppings! Stack the pancakes with coconut yoghurt and fruit in between. Add whichever toppings you like - I included coconut yoghurt, coconut flakes, maple syrup, oranges, pomegranate seeds, kiwi fruit, hemp seeds, goji berries and Vitamin C Zooki.
